- 1836, as a chemical term, from Fr. margarine, from margarique "margaric acid," lit. "pearly," so called for the luster of the crystals, from Gk. margarites "pearl." Margarine "butter substitute," invented 1869 by Fr. scientist Hippolyte Mиge-Mouries. The chemical word was erroneously applied to it first in 1873.
